  2. two medium sized tomatoes – chopped
  3. 180 g (0,40 pounds) large shrimp, peeled and deveined
  4. 450 g (1 pound) of canned white beans
  5. 200 g (1 cup) rice
  6. Tomato paste
  7. Seasonings – salt, pepper, garlic, red pepper, parsley

HOW TO MAKE:

1. Begin with your Rice

To kickstart this dish, prepare your rice according to the package instructions. Once cooked, set it aside and keep it warm.

2. Sauté the Onions:

In a large skillet or pan, heat a bit of oil over medium heat. Add the finely chopped onions and sauté them until they turn translucent and slightly golden.

3. Cook the Shrimp:

  • Push the sautéed onions to one side of the pan to create space for the shrimp.
  • Place the peeled and deveined shrimp in the pan. Season them with a pinch of salt, pepper, and minced garlic.
  • Cook the shrimp for approximately 3-4 minutes, turning them halfway through, until they turn pink and opaque. Once cooked, remove the shrimp from the pan and set them aside.

4. Add the Tomatoes:

  • In the same pan, add the chopped tomatoes. Cook them until they start to release their juices and soften.

5. Adding White Beans:

  • Pour in a bit of water (around 1/2 to 1 cup) to the pan with the tomatoes. This will create a flavorful base for your dish.
  • When the water starts to boil, reduce the heat to a simmer and add the canned white beans (drain and rinse them before adding). Allow the mixture to simmer for approximately 10 minutes, letting the flavors meld together.

6. Tomato Paste Addition:

  • Stir in tomato paste, incorporating it thoroughly into the mixture. This will add depth and richness to the sauce.

7. Reunite Shrimp:

  • Return the cooked shrimp to the pan with the tomato and white bean mixture.
  • Add additional seasonings to taste, adjusting the salt, pepper, garlic, and red pepper based on your preferences.

8. Combine with Cooked Rice:

  • Finally, add the cooked rice to the pan. Stir everything together, ensuring that the flavors meld.
  • Allow the entire dish to cook together for at least 5 minutes. If you prefer a thicker consistency, you can cook it a bit longer, stirring occasionally.

9. Garnish and Serve:

  • Once everything is heated through and the flavors have melded, your Shrimp, White Beans, and Rice is ready.
  • Garnish with fresh parsley for a burst of color and freshness.
